Ingredients:
For the Oreo Crust:
1 1/2 cups Oreo cookie crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Mint Chocolate Chip Cheesecake Filling:
24 oz cream cheese, softened (3 packages of 8 oz each)
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 tsp peppermint extract
Green food coloring (optional)
1 cup mini chocolate chips
For the Chocolate Drizzle:
1/2 cup semi-sweet chocolate chips
2 tbsp heavy cream
Instructions:
Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with a double layer of heavy-duty aluminum foil to prevent leaks.
Make the Oreo Crust:
In a medium bowl, combine Oreo cookie crumbs and granulated sugar.
Stir in the melted butter until the mixture is evenly combined and resembles wet sand.
Press the mixture firmly into the bottom of the prepared springform pan.
Bake in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.
Make the Mint Chocolate Chip Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Add granulated sugar and mix until well combined.
Add eggs one at a time, mixing well after each addition.
Stir in sour cream, peppermint extract, and a few drops of green food coloring (if using) until the mixture is smooth.
Fold in mini chocolate chips gently.
Assemble the Cheesecake:
Pour the cheesecake filling over the cooled crust in the springform pan.
Smooth the top with a spatula.
Bake the Cheesecake:
Place the springform pan in a larger roasting pan and add hot water to the roasting pan until it reaches halfway up the sides of the springform pan (water bath).
Bake in the preheated oven for 60-70 minutes, or until the center is set and the top is lightly golden.
Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour to cool gradually.
Chill the Cheesecake:
Remove the cheesecake from the water bath and discard the foil.
Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
Make the Chocolate Drizzle:
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
Remove from heat and add semi-sweet chocolate chips.
Let it sit for 2-3 minutes without stirring, then stir until smooth and glossy.
Add the Chocolate Drizzle:
Before serving, drizzle the chocolate mixture over the chilled cheesecake.
Serve:
Carefully release the sides of the springform pan and transfer the Mint Chocolate Chip Cheesecake to a serving plate.
Slice and serve chilled. Enjoy the refreshing mint flavor combined with chocolate chips in every bite!
Yield:
This recipe makes one 9-inch Mint Chocolate Chip Cheesecake, serving about 12-16 slices.
Delight in this Mint Chocolate Chip Cheesecake, a perfect balance of minty freshness and chocolate goodness!
